Chickpea/Garbanzo Appetizer

2 c cooked chickpeas

¼ c olive oil

¼ c lemon juice

6 cloves garlic, crushed

1 tsp salt (I use ½ tsp salt)

2 Tbsp finely chopped scallions (I use green onions)

2 Tbsp finely chopped cilantro (I have substituted flat leaf parsley when lacking cilantro)

1 Tbsp finely chopped fresh mint (If I don’t have fresh mint, I use ½ tsp dried mint when I remember it)

Thoroughly mix all ingredients except the mint; then place in a serving bowl and refrigerate 1 hour. Just before serving garnish with mint. I include the mint when mixing everything.
